Corn Bread Muffins

I love corn bread.  Probably because it's more like corn-cake than corn-bread.  Yum!  Is there anything better than corn bread with butter and honey?  Maybe a buttermilk biscuit with butter and honey.  But corn bread was calling to me and I gave in!

Corn Bread Muffins

1 cup corn meal
1 cup flour
1/4 cup sugar
1 tablespoon baking powder
1  teaspoon salt
1 cup milk
1/3 cup vegetable oil
1 large egg, lightly beaten

Preheat oven to 400 degrees F.  Combine corn meal, flour, sugar, baking powder, and salt in a medium bowl.  Combined milk, oil, and egg in a small bowl and mix well.  Add milk mixture to flour mixture. Stir until blended.  Spoon batter into greased muffin tin.  Bake for 15 minutes.
